
A rich, nourishing twist on classic banana bread - made with almond flour, WelleCo chocolate protein, and chunks of 85% dark chocolate for a satisfying, better-for-you treat.
Dry:
- 3/4 cup almond flour
- 3/4 cup plain flour
- 1/3 cup WelleCo Chocolate Nourishing Protein
- 1/4 cup desiccated coconut
- Pinch of cinnamon
- 1 tsp baking soda
- Pinch of salt
- 1 block 85% dark chocolate, chopped
Wet:
- 3 overripe bananas, mashed
- 2 eggs
- 1/4 cup olive oil
- 1/4 cup almond milk
- 1/4 cup maple syrup
- 1 tsp vanilla
Method:
- Add all dry ingredients to a bowl (except dark chocolate block).
- In a separate bowl, whisk together wet ingredients.
- Mix wet to dry.
- Add in chocolate block.
- Pour into lined loaf tin and bake for 45-50 mins on 180°C.
- Allow to cool slightly in the tin, and then transfer to cooling rack.
- Store in airtight container.
