Ingredients (serves 8):
Dry:

1 ½ cups almond meal

½ cup wholemeal spelt flour (or gluten-free flour blend)

1 tsp baking powder

½ tsp baking soda

Pinch of salt

2 serves The Super Elixir™ Blood Orange
Wet:

¾ cup Greek yoghurt (full-fat or coconut yoghurt for dairy-free)

½ cup extra virgin olive oil
-
½ cup maple syrup or honey
-
2 eggs
-
Zest of 1 blood orange
-
Juice of 1/2 blood orange
-
1 tsp vanilla extract
Optional Topping

Greek yoghurt or coconut yoghurt

Blood orange slices
-
Drizzle of honey or maple syrup
Method:

Preheat the oven to 170°C (fan-forced). Grease and line a 20cm round cake tin or 23cm loaf tin.

In a large bowl, whisk together yoghurt, olive oil, maple syrup, eggs, orange zest and juice, and vanilla.

In another bowl, combine almond meal, spelt flour, baking powder, baking soda, salt, and The Super Elixir™ powder.

Fold dry ingredients into wet until just combined. Do not overmix.

Pour batter into the prepared tin and smooth the top.

Bake for 40–45 minutes or until a skewer comes out clean.

Cool in tin for 10 minutes, then transfer to a wire rack.

Top with yoghurt, and fresh blood orange slices before serving.
