Rum Rum Balls

These two-biters are rich and chocolatey enough to satisfy a sweet-tooth craving.
 

WelleCommunity member @edgarraw, has created these delicious protein-packed Rum Rum Balls perfect for a snack throughout the day.

 

½ cup of Nourishing Protein Chocolate

2/3 cup unsweetened desiccated coconut

1 cup dry roasted almonds

10 medjool dates, pitted

¼ cup pomegranate seeds (optional)

¼ cup of coconut oil (melted)

2 tablespoons almond milk

2 teaspoons rum

 

Add everything (except pomegranates and almond milk) into a food processor or high-speed blender and process until the large pieces of nuts and dates become small.

 

Process until the mixture looks like a dough ball. If it isn’t, and this could be due to overly dry dates, add mixture into a large bowl, add 1-2 tablespoons of almond milk and mix well, then add the pomegranate seeds. Mix well with your hands, then using a small ice cream scooper, scoop and roll them into spheres with your hands.

 

To make these last more than a week, freeze them in a closed container for up to 3 weeks, but only if you have not included pomegranate seeds.

 

MAKES APPROX 26 BALLS.
