Peanut Butter Protein Slice

WelleCommunity member @sez_pilates uses The Chocolate Nourishing Protein for her take on the Boatshed Peanut Butter Slice.⁠

 

Ingredients:

  • 1/2 cup almonds⁠
  • 1/2 cup cashews⁠
  • 1/4 cup Nourishing Protein Chocolate⁠
  • 2 tbsp melted coconut oil⁠
  • 1/2 cup medjool dates (soaked in hot water)⁠

Blend everything until sticky and well combined, then press into a lined tin. Pop it in the freezer while you make the next layer.⁠

Filling:
  • 1/2 cup crunchy PB⁠
  • 1/4 cup tahini⁠
  • 1/3 cup melted coconut oil⁠
  • 1/3 cup golden syrup (or honey/rice malt—tbh I added a lil’ extra honey)⁠

Mix until smooth and creamy, then spread over the base. Back in the freezer it goes for 15–20 mins to firm up.⁠

Topping:

  • Handful of choc chips (melted)⁠
  • 1/4 cup cacao⁠
  • 1/2 cup coconut oil⁠
  • Crushed almonds (for that crunch)⁠

Melt choc, stir in coconut oil + cacao, then pour over the set filling. Sprinkle with crushed almonds for the final touch. Freeze for 1–2 hours ‘til fully set.⁠

Slice it. Taste it. Hide it from everyone else. ⁠
