Method:

1. Blend base ingredients in a food processor until they hold together when pressed between your fingersβ
2. Add the base mixture to a 30x20cm lined baking tray and press down with the back of a spoonβ
3. Refrigerate until set for at least 1 hourβ
4. Blend peppermint filling ingredients excluding the greens powder (and food colour if using) until smooth, stir through greens powder and colourβ . Pour the peppermint filling over the base and return to the fridge for an hourβ
5. Add the dark chocolate and coconut oil to a bain marie and meltβ
6. Pour the chocolate over the top of the peppermint layer and refrigerate until setβ
7. Slice and enjoy!β
