
Quick, easy, and made in a blender - these banana protein muffins are soft, naturally sweet, and perfect for breakfast or a snack. Best served with a spoonful of peanut butter and a cup of tea!
Ingredients
Wet:
- 3 overripe bananas
- 2 eggs
- 1/3 cup peanut butter
- 2 tbsp extra virgin olive oil
- 1 tsp vanilla
- 1/4 cup honey or maple syrup
Dry:
- 1/3 cup WelleCo Nourishing Protein in Vanilla
- 1 + 1/3 cup almond flour
- 1 tsp baking soda
- 1 tsp cinnamon
- Pinch of salt
Method
- Add the wet ingredients to a blender until just blended. Add the dry ingredients and blend one more time until just combined.
- Pour the mixture into lined muffin tins and bake in the oven for 20-22 minutes on 180*C or until just set.
- Serve with extra peanut butter and a cup of tea for the perfect snack.
