Greens Zucchini Fritters

Light, nourishing, and packed with greens, these zucchini fritters are a simple way to boost your veggie intake without compromising on flavour. With the added goodness of WelleCo Super Elixir, they’re perfect for a wholesome brunch, snack, or easy meal.

Serves 10.


Ingredients 

  • 2 medium zucchini, grated

  • 1 cup baby spinach or kale, finely chopped

  • 2 eggs

  • ⅓ cup feta, crumbled 

  • ½ cup flour

  • 2 serves WelleCo Super Elixir (Unflavoured, Lemon & Ginger, or Pineapple Lime)

  • 1 spring onion, finely sliced

  • 1 garlic clove, minced

  • Zest of ½ lemon 

  • Salt & pepper to taste

  • Olive oil for cooking


Method

  1. Place grated zucchini in a clean tea towel and squeeze out as much liquid as possible.

  2. In a bowl combine zucchini, spinach/kale, eggs, feta, flour, Super Elixir, spring onion, garlic, lemon zest, salt, and pepper.

  3. Heat olive oil in a frying pan over medium heat.

  4. Scoop 2 tablespoons mixture per fritter into the pan and flatten slightly.

  5. Cook 3–4 minutes each side until golden and cooked through.

Serve with Greek yoghurt and avocado.
