Ingredients

2 medium zucchini, grated

1 cup baby spinach or kale, finely chopped

2 eggs

⅓ cup feta, crumbled

½ cup flour
-
2 serves WelleCo Super Elixir (Unflavoured, Lemon & Ginger, or Pineapple Lime)

1 spring onion, finely sliced

1 garlic clove, minced

Zest of ½ lemon

Salt & pepper to taste

Olive oil for cooking
Method

Place grated zucchini in a clean tea towel and squeeze out as much liquid as possible.

In a bowl combine zucchini, spinach/kale, eggs, feta, flour, Super Elixir, spring onion, garlic, lemon zest, salt, and pepper.

Heat olive oil in a frying pan over medium heat.

Scoop 2 tablespoons mixture per fritter into the pan and flatten slightly.

Cook 3–4 minutes each side until golden and cooked through.
Serve with Greek yoghurt and avocado.
