Ingredients

1 tbsp olive oil or butter

1 brown onion, chopped

2 cloves garlic, minced

1 large cauliflower, chopped

2½–3 cups vegetable stock

¾ cup full-fat coconut milk or cream

Salt + white pepper

Juice of ½ lemonOptional (nice but not necessary)

1 small potato, cubed (extra thickness)

Nutritional yeast or parmesan to finish
Method

Heat oil/butter in a pot. Sauté onion 4–5 minutes until soft. Add garlic, cook 30 seconds.

Add cauliflower (and potato if using) + stock. Simmer 20 minutes until very soft.

Blend until completely smooth.

Stir in 1 serve Super Elixir™ while warm (not boiling).

Add coconut milk or cream, salt, white pepper and lemon juice. Warm gently and taste.
