Creamy Cauliflower Soup & Elixir

It’s the perfect cosy bowl for cooler days: satisfying, nutrient-dense, and easy on the gut. Enjoy it as a light lunch or pair it with crusty bread for a wholesome, feel-good dinner that tastes indulgent but fuels your body.

Ingredients

  • 1 tbsp olive oil or butter

  • 1 brown onion, chopped

  • 2 cloves garlic, minced

  • 1 large cauliflower, chopped

  • 2½–3 cups vegetable stock

  • 1 serve WelleCo The Super Elixir™ Unflavoured

  • ¾ cup full-fat coconut milk or cream

  • Salt + white pepper

  • Juice of ½ lemonOptional (nice but not necessary)

  • 1 small potato, cubed (extra thickness)

  • Nutritional yeast or parmesan to finish

Method

  1.  Heat oil/butter in a pot. Sauté onion 4–5 minutes until soft. Add garlic, cook 30 seconds.

  2.  Add cauliflower (and potato if using) + stock.  Simmer 20 minutes until very soft.

  3. Blend until completely smooth.

  4. Stir in 1 serve Super Elixir™ while warm (not boiling).

  5. Add coconut milk or cream, salt, white pepper and lemon juice. Warm gently and taste.
