Ingredients (Serves 4)

2 cups thickened cream

1 cup milk of choice

2–3 tsp The Collagen Elixir

2 tbsp maple syrup or honey

1 tsp vanilla bean paste or extract

2 tsp gelatin powder

2 tbsp cold water
Method

Sprinkle gelatin over cold water in a small bowl. Let sit for 5 minutes.

In a saucepan, gently heat cream, milk, The Collagen Elixir, maple syrup, and vanilla. Do not boil — just warm enough to steam lightly.

Remove from heat and whisk in bloomed gelatin until fully dissolved.

Divide into ramekins or glasses. Refrigerate for at least 4 hours or overnight until softly set.
