Collagen Pancake Stacks

Ingredients (makes 4 pancakes):

  • 1 ripe banana, mashed

  • 1 egg

  • 1/3 cup plant based milk

  • 2 serves The Collagen Elixir

  • 1/2 cup oat or almond flour (or ground oats)

  • 1/2 tsp baking powder

  • 1/2 tsp cinnamon

  • Pinch of salt

  • Coconut oil or butter, for cooking

  • To serve: Greek yogurt, berries, honey, or coconut yogurt


Method:

  1. In a bowl, whisk or blend together banana, egg, and milk.

  2. Stir in Collagen Elixir, flour, baking powder, cinnamon, and salt until a batter forms.

  3. Heat oil in a non-stick pan over medium heat. Spoon in batter to form pancakes.

  4. Cook 2–3 mins per side until golden and cooked through.

  5. Stack, top with yogurt and berries, and enjoy.

  6. Add a dash of vanilla or orange zest for a flavour twist.
