Ingredients (makes 4 pancakes):

1 ripe banana, mashed

1 egg

1/3 cup plant based milk

2 serves The Collagen Elixir

1/2 cup oat or almond flour (or ground oats)

1/2 tsp baking powder

1/2 tsp cinnamon

Pinch of salt

Coconut oil or butter, for cooking

To serve: Greek yogurt, berries, honey, or coconut yogurt
Method:

In a bowl, whisk or blend together banana, egg, and milk.

Stir in Collagen Elixir, flour, baking powder, cinnamon, and salt until a batter forms.

Heat oil in a non-stick pan over medium heat. Spoon in batter to form pancakes.

Cook 2–3 mins per side until golden and cooked through.

Stack, top with yogurt and berries, and enjoy.

Add a dash of vanilla or orange zest for a flavour twist.
