Caramel Collagen Cookies

These soft, golden cookies are filled with a rich, buttery caramel centre and enhanced with collagen for a functional twist. Perfect for when you want something sweet yet nourishing, they strike the balance between indulgence and feel-good baking.

Ingredients

  • 1 cup flour 

  • 2 serves The Collagen Elixir

  • 2 tbsp coconut oil 

  • 1 egg

  • 2 tbsp maple syrup 

  • ½ tsp vanilla extract 

  • ¼ tsp baking powder 

Caramel 

  • ½ cup butter 

  • ½ cup monk fruit 

  • ¾ cup thickened cream 

  • ½ tsp vanilla extract 

  • Pinch salt 


Method 

  1. Preheat oven to 180°C and line a baking tray.

  2. In a bowl mix almond meal, collagen, coconut sugar, baking soda, and salt.

  3. Add egg, melted butter, maple syrup, and vanilla. Stir until a soft dough forms.

  4. To make caramel: Melt butter in a saucepan over medium heat.

  5. Stir in the sweetener and cook for about 2–3 minutes, stirring until dissolved.

  6. Slowly pour in the cream, whisking continuously.

  7. Simmer gently for 3–5 minutes until slightly thickened.

  8. Remove from heat and stir in vanilla and salt.

  9. Shape cookie dough into small balls and form a hole in the middle with your finger.

  10. Spoon caramel into each cookie, drizzle over any remaining sauce.

  11. Bake for 15-20 minutes or until golden around the edges.
